How do i earn each paladin rune? I finished the game and only earned the first 2 in the path of combat, didnt bother getting any healing ones.

Albrecht gives you only first two runes. Third rune you can get from Lord Archol (after defeating him) in the Halls of Irdorath. |

but wasn't there a summon goblin skeleton rune for paladins? How do i get that?

Summon Goblin Skeleton paladin-rune? There's no such rune.
Only eight paladin runes are available: 1 light, 3 combat, 3 heal, 1 teleport. |

You can find a create goblin rune, but as Paladin you can't ever use it since it requires magic circle learning
