I have the same question...I looked in the manual, but can't seem to find it. Do you need special tools?

Snake mode

sorry, that would be "sneak mode" - too reliant on spell-check

Not worth it.

You have to be in the stealth mode (default: left ctrl), when the name of the person appears press action key (default: space bar)

Well with someone who is specialized in sneak, it is well worth it. I have mapped sneak to the right side button on my mouse, and the action key to the left mouse button. So I step into a place immediately sneak, and then start on the fun. Easy money, adrenaline rush as you know that if you get caught you get to pay the fine, go to prison, or my favorite get some hand to hand practice on a guard.

I do find pickpocketing prohibitively difficult, as it's next to impossible to sneak anywhere, short of being in an empty room with a closed door.

At higher levels is it possible to sneak in plain sight?

I tried looking into some pockets, but they didn't have much of anything.

What you initially see when you pickpocket the character is related to your sneak skill. If your sneak skill sucks then so does your pickpocket which means you may not see anything to take even if your pickpocket was successful. I think that with a good enough sneak ability you can pickpocket everything that a char had except the equipment he is wearing.
