I read somewhere that it is possible to create all characters and not just one.
They say you must use multiplayer game or something like that.
Did someone of you try it? Are there some disadventages?
(I think for exapmle - many quests are connected with NPC you take to your party, will you lose this quests?)

Yes, you can create the entire party.
I don't recommend it. What set BG2 apart from the other games was the depth of character interaction (second only to Torment in an infinity engine game). When you take away the character interuptions in dialogues, their quests, their comments... BG2 becomes a souless thing... like BG.
For party created combat carnage, go with IWD and all its expansions. It's built for that... no character personality, just pure combat.
My opinion, of course, but I'm sticking to it. I tried it, and just couldn't stand it...
