Do you really need pack mules in the game? I usually do EVERYTHING, search EVERYWHERE, and usually find everything I need rather than buying it, so I dont know if the shop keepers later in the game will have enough items I would want to sell everything I get for?

Well, I do not use them.
They can be useful but I think that they are necessary only if you play with few or just one character.
Otherwise there is enough room in inventory of your characters for unique, very expensive items.
You can pick up everything and then sell it, but good magic armor has price of 100 normal armors, so you do not really need to take normal things.

Packmules are a must if you plan to go with one character. I would die quickly without all those life potions, that one of my packmules carries for me. Anyway it's good that when you run from enemies, they stop pursuing you after awhile.
