How much is there known about the character customization in Gothic?

Everything.
You allways start with the same newbie prisoner. Then you chose your camp and later your exact career inside the camp. Of course you have to specialize. Master of onehanded and twohanded swords plus career as demon invoker is not possible because you will hardly have enough skill points to spend.

If you're talking about cheating to make your character, then everything is known.
