When I go into combat mode all I can use is my fists, even though I have my bow equiped.

Weapon controls are the keys 1...0.
1=melee weapon
2=ranged weapon
3=last used spell
4=first assigned spell
5=second ....
...
0=7th assigned spell.
The controls are absolutely simple and very fast. You can assign/unassign weapons and spells in the inventory with (Control or LMB) + forward.
To use the bow press "2". Gothic automatically changes into combat mode.

Borrow Mordrag´s bow. 
Or buy one.

No one (that I know of) sells Bows…Do you mean Kill Mordrag and take his?

Why not? If he carries one, get the quest from Thorus, knock Mordrag out and tell him the OC is too small for the two of you. |

Possible.
Is he alone at night? Can you ask Mordrag to show you the NC? It´s also worth a try if the shadow really helps Mordrag if you mention Thorus name and then kick his ass.
