You should have no problems beating them with those stats. The only thing I may suggest is using 1H weapon. 1H weapons are faster and may allow you to land your hits better.

When I fought skeletons with 2H, I never even tried blocking, just let them swing at you and then pummel them while their sword is recovering. But this is not something that would work against shadow warriors in chapter 1.

Get yourself an orc slayer sword. And try again.

I did it at lvl 7 by using my light crossbow
I killed two of them they were guarding a nice two handed sword called the dragon slicer which does 80 damage
