Torches?
   

My monk does not appear to lose any of his unarmed attacks when holding a torch. Is this a bug, or is unarmed not considered multiple weapons even though the animations show fists and feet flying?

No, it's perfectly correct. The Monk unarmed attack is considered done not only with fists and kicks but also with knees and elbows so he can perform it even if he has something in his hands. (even others weapons)

P.S.
This above is in the original game rules - the player's handbook - in NWN you can equip something that is not a weapon in the left or right hand and combat normally. You cannot equip another weapon and perform an unarmed attack.

Actually the exception to the rule is the kama. Only weapon a monk can use without losing the unarmed bonus.
