Does Apprenticeship matter?
   

Are there any particular benefits to any of them?

I chose the Blacksmith route, and so far he only taught me how to make a basic sword, nothing else. He will train my strength also, but thats it. Is this all there is to being an apprentice Smith?

Each one gives you a different small advantage over playing without apprenticeship. Nice to have, not more.

As a Blacksmith apprentice in Khorinis, do I ever get to make better swords than those plain swords, other way than learning that magic ore stuff from the mercenary smith?

If You want to forge magic ore swords probably the only way is to join mercs. Harad in later chapter will create magic weapon for paladin but teaches only how to make simple swords

talk to Bennet while he's at the forge or the anvil multiple times for 2 cold or hot steel rods every time )

I've made bout 5k in a very very very short time by being a black smith apprentice
