I know you can; but is it advisable to join more than one guild. I joined the fighters guild, but I do have sticky fingers. Can I join the thieves guild without any problems later?

If you are very, very, very careful about your later missions, yes. You must just be sure to do quests at the same speed. (1 thieves, 1 fighter, 1 thieves, 1 fighter)

You can join as many of the guilds/factions as you want with the exception of Great Houses. However, not all the guilds/factions have the same end goals. If you don't care about morality/ethics in an RPG, there are no issues at all; if you do care, then you will have some decisions to make as the game progresses. For me, this has been one of the great joys in MW. Joining more of the guilds/factions will speed your understanding of the underlying conflicts in MW. One piece of advice, complete the infamous Code Book quest for the Balmora Fighters Guild before joining the Theives Guild, otherwise it is difficult to complete and impossible without compromising your character's integrity (only an issue if he/she has any and you care about it).
