Is there supposed to be speech in this game, for all dialogue? I'm playing the demo, and sometimes there is, and sometimes there isn't.

No, there is no speach for all dialogues, just for several.

Arcanum has something like 300,000 words of dialogue (a novel). Voice acting them all would be... uh... time consuming.

Gothic has spoiled you. When you get to Morrowind expect page after page of boring non-spoken dialogue.

They said that about Morrowind? Bummer.

It's not only Gothic that spoiled me, but lot's of other games as well. But most of the games I play are much shorter than Morrowind or Arcanum.

Personally, I would prefer all or nothing.

It is not possible to make speaches for all words in long games with a lot dialogues.
Or you must expect on "only speaches CD" and 2times so high price . And this is something I really do not want.

Well, at 64 kbps (fine for speech), you can fit about 25 hours of MP3s on a 700mb CD. Surely it can't have that much.

Yes, you are right. I overestimated time and data size for it.
However it is still a lot of work (you need different voices for different character etc.).
