I played city guard then Paladin. For me this was good but can`t say if it would be better to play one of two others or not. Probably only little bit different - especially mage.

so that i completely understand this, it doesn't matter what guild you choose, you can never upgrade to another guild no matter what? so how do you get better armor and stuff?

To get a better understanding between the two of us There are three ways of advancement in the game:
1) city guard -> paladin
2) Mercenary (militia) -> dragon slayer
3) mage -> (never remember this one) high mage or sth
You can join thieves guild too and its independent from which main guild you choose.
And last. Can`t cross the paths of advancement - I mean city guard can`t become a dragon slayer for example.

Actually, although mercenary is also known as "Söldner", mercenary is NOT militia. And yes, city guard is part of the militia, also known as "Miliz".
