I got Cassia the ring and she gave me the key to the door in the hotel. Now she'll teach me dex, but doesn't offer me the blood chalice quest. Is there any way to induce her to offer the quest?

well to be honest i'm not sure what the problem is but after formally joining the guild (ie after getting constantino's ring) you should have the option to ask her if she has any jobs for you (you have to actually ask her about a job rather than her offering one).
it's strange that you can't get the blood chalices quest as you should be able to get the quest in chapter 1 (as opposed to the sextant which requires chapter 2 or above while finger's chest requires chapter 3 or above).
as a side note i presume you've been taught the secret thieves' nod (or whatever it is). if you now talk to the various people who you did missions for and show them the nod you can get some benefits such as +2 dex, selling silverware and buying lockpicks.

Hmm maybe you should learn pick pocketing first and then you can ask Cassia about a new jobs. But I'm not sure, it's only my opinion (don't beat me if I'm wrong, please  ) |

I have the nod and have learned all the skills. She doen't offer any jobs, nothing - just Dex training.
