How do I set quick keys?

Press F1 and the quick key menu will appear. Click on a number from 1 to 9 (0 is reserved for Hand to Hand), select what type of action you want to perform (Inventory if you want to equip an item, for instance), then select the item.

In-game, tap that key to perform that action.

N.B. There were a couple of bugs in this area last time I looked, so make sure you don't trigger the menu system (escape), the menu screens (right-click) or dismiss the quick-key menu (F1) with one of the selection windows up.
