I am in chapter 2 and found diego and his bag even before I found him. but he doesn't ask anything about his bag  is this a later quest or can I keep his gold just for me?

It´s a later quest. If you open the bag this you´ll fail it.

Accualy if u open the bag u'll just get 1000 gold. If u need to return his bag, just have 1000 gold ready and they u'll just pay him 1000 gold.

If you take the safe way in to the VoM. go to your right butcher a few orc warriors then you"ll be at a lake go the road up untill you are atthe top side of the lake and go of the path to your left( with the lake behind) you'll find it there close to a camp fire if I'm not mistaken.

Didnt Diegos bag had also a ring which you could get without pulling out the gold?

Diego's bag is down by some boards on the ground not far at all from the lake. After you beat orc behind, look to your left. It labels as full leather satchel.

Never opened it so don't know about a ring. There is a ring in the bag from the stone golem cave.

stone golem cave? I now one stone golem located in Khorinis but didn't beat him yet. But never saw a cave in his surrounding?

It's the caves near the pyramid. There's a bunch of stone golems laying around that remain dormant until you open this one particular chest. Then, if you start attacking before they fully alive they are real easy, but if you wait too long they are a pain in the behind. You can hit them while dormant but it does nothing to their hit points.
