Str leveling question?? (Demo)

Ok so the blacksmith will only help you get your str to lvl 50 right? So does that mean if i want it higher i should wait until i reach lvl 50 str. Before Praying at Inno's Shrine?

Yes, making it possible to reach 61(you can get 11 from the statue)..

Also, there is a strength ring(giving +5) up on a cliff to the right when you exit through the non-demoground exit of Khorinis(you walk the usual road up to the stairs leading to the farm, then turn left when you come up to the top of the stairs.. after that, follow the edge of the mountain until you find the rind and some other items).
