I'm a Gemini, so I get to pick at least two for each category 
Favourite book: anything by John Douglas or Barbara Erskine
Favourite Movie: The Professional or a good old black and white like The Ghost and Mrs Muir or The Wicked Lady.
I could write a list a mile long for this. I really enjoy movies and books, but these were the first thought.

The Song Of Phaid The Gambler (Mick Farren - haven't read it since childhood, so it may not be that good in truth, but it fascinated me back then. Will have to revisit it).
I'm part-way through Blood Meridian by Cormack McCarthy, which is shaping up to be a fantastic book. Might end up ousting one of the above three.
Films:
so difficult to choose... but my no.1 is the Third Man. I love it.
Then probably Rashomon...
Then maybe Miller's Crossing. No wait... Sling Blade... no... Breaker Morant... Repo Man... argh! Now I can't stop - I blame Kayla!   |

Neuromancer is one of those books that changes a person's insight or outlook on the world. Gibson's recent works feel more dilute or weaker than his first one, so I haven't read his fiction as much. And anything by Kurosawa deserves watching, whether it has samurai or not.
Most favorite books are Book of the New Sun series by Gene Wolfe. You can't separate them--only the tetralogy (or quintology if you include another book, which takes place decades after the main adventure) does the plot and themes justice. I don't think I've ever found a book where an author blended so many ideas and themes effortlessly, and created a world that rivaled or even surpassed Tolkien's Middle Earth. History, myth, religion, technology, politics, and love move the world of Urth, even as she shudders in the icy embrace of the dying Sun. Add gorgeous prose and a deep plot, and you have a sure winner.
Most favorite movie..hmm...probably "At Play in the Fields of the Lord." It's based on the book by Peter Matthiessen, which follows the arrival of Christian evangelical missionaries to convert and "save the souls" of an Amazonian Indian tribe. Little do they know that love and sin can be the same in Eden, and sometimes, Eden is best left untouched. Good book. Good movie. Has some nudity, but it was filmed on location in the Amazon among the Amazonian Indians, so I think this is to be expected.

I rather liked Jay and silent bob and his other movies like dogma mall rats and clercks they were great there I though Jay&silent bob strike back was a bit stupid

My favourite book in fantasy: Dark pilgrim from Ray O'Sullivan. You probably don't know it , because it's a hungarian book:)
My other favourite book is On War from Carl von Clausewitz.
My favourite film are Black Hawk Down and Schindler's list.
