character classes... multiclassing

I wonder which is the best combination
in a game where you can create 6 chars of your own

In Icewind Dale1 had

1 paladin for melee (a little spellcasting)
1 fighter/thief for melee and thievery (and bows)
2 figther/cleric for melee and healing
2 fighter/mages without armor for spellcasting and bows (carefull melee)

nice combo...all can melee, 3 can shoot bows, 5 can spellcast
only the spellcasters were always 1-2 lvls behind
but I have experienced that pure casters were killed fast with their low HP!

or would a almost single-class party of 2 fighters 1 fighter/thief 2 clerics and 1 mage be stronger?
but then you would have only 1 person to cast magespells! and 3 persons with low HP more likely to be killed!

note: single class thieves are very weak in AD&D ! game balance ?!

and can somebody explain the 3rd edition multiclass rules please?
are they used in Pool of Radiance 2 too?

at first one character can be only 1 class? but then how fast would he level up?? if this would be calculated by his overall level this would be not fair...
for ex. a lvl 4/4 fighter/mage is not as strong as a lvl 8 fighter or mage !
