omeone told me that you get a chance to kill gomez and get the dungeon key. When can you kill him? and what chapter? Also do they ever fight in the arena or do he just keep saying that there will be an anouncement?

When you get the rune to transport to the Fire Mages, you will be able to fight Gomez and all his cronies.

There never is a fight - that day never comes so you can never place a bet.

How do you get the rune to transport to the fire mages?

You use the key to open a chest in Xardas' Sunken Tower, which contains the rune.

The people gather around the arena fom 7:30pm-9:30pm.
Schedule your fight with Kirgo or Kharim then.
It serves no purpose other than making the fight more enjoyable.
