Pal's have better armour
Mercs have better weapons
Pals can use runes
Mercs cannot

Pals are potentially much more powereful as they can use magic

Wolf can teach you bow no matter which camp you join.
Lee can teach you two-handed weapon late in the game.

Played Gothic 1? If you have, I can say that:
Paladin = Heavy Templar
Dragon Hunter = Heavy Mercenary

The real difference is whether you want to use crossbow/bow as your ranged weapon, or magic(there are advantages to both).

Paladin's Armor
Weapon Protection: 100
Arrow Protection: 100
Fire Protection: 50
Magic Protection: 50

Heavy Dragon Hunter's Armor
Weapon Protection: 90
Arrow Protection: 90
Fire Protection: 60
Magic Protection: 40

Take your pick. You can't, however, choose your guild just by looking at their armors.

Buster will teach you 1h-weapon up to 30%.
Cord will teach you 1h- and 2h-weapon up to 90% if either your 1h- or 2h-weapon skills is above 30%.
Lee will not teach you anything unless you're a merc or dragon hunter. However, after chapter 4, he'll 2h-weapon up to 100% but that will cost money.

Paladins are WAY more powerful than dragonhunters. I killed all dragons and all the enemies in the last chapter with paladin magic only! This spell they give you that costs 15 mana and does 300 dmg , it kills an elite orc with one!!! hit. I had my mana up to 75 (with praying - reloading to get +4 mana - and two rings) and when I went back to the mine valley in the 5th chapter - oh, it was a slaughter, they had absolutely no chance . I think they've made a paladin the most powerful, most versatile character, perfect in close and ranged combat. Of course it gets so not until the fifth chapter.
