Don't worry. If you're like the rest of us, you'll replay Gothic at least 2 or 3 more times. 
To get Shrat out of his hut alive, you have to go there early in the game and lead him past the swamp sharks. This can be difficult to do, but can be done. The biggest problem is that he either runs from the swampsharks in the wrong direction, or tries to attack them and gets eaten. 
See my thread on Followers and how to handle them. It does require some use of cheats to manage and equip followers, but it can be a fun alternative to normal play.
I do recommend that you play at least once each as a Mage, Guard and Merc before you start messing around with cheats. But after that, cheats can open up new game situations you wouldn't have access to without cheating. So at least consider it for later replays.

Wow after all this time after I finished G1 i finally now what that thing in the swamp was  . Well now I almost finished G2

I've always been thinking that this orcish pedestal was there to draw attention, so that you easier could find those healing herbs for Y'berion. What do I know ?
