Add-ons - general question on gameplay

What happens if after playing an add-on, you elect to delete the add-on from the Morrowind directory. Will that effect the game? Or can one play an add-on, delete it, play another, delete, and so on and so on

If you mean the official add-ons, you will most probably be forced to go back to a pre-add-on-savegame.

Removing mods mid-character is generally not recommended. You may be fine, but things may have been altered in subtle ways that you wouldn't expect - areas vanishing may remove unique items from the game if you'd left them there, game parameters may revert to previous levels or not, depending on how things have been implemented, equipment you're carrying may or may not disappear.

Adding new modifications is no problem, but I certainly recommend taking a backup save before removing one, and running around as much as possible making sure everything's still working before doing anything you'd rather not lose.
