Indeed, the dialog is embedded in the .rim files. I don't know of a collection, as such, but you can use Kotor Tool to view the text in the dialogs themselves.

There's a character editor in Kotor Tool. I don't know exactly what you're trying to do, but I have used it to change many of the in-game NPCs to my liking. You can change their abilities, weapons, sk ...
