RPGVault has written up some first impressions for Wizardry 8, based on 10 hours of play. While there isn't much in there you wouldn't know from the demo, it's well worth a look. Here's their summary:

While my playing time has been limited to date, I find myself quite impressed with what Wizardry 8 has to offer. Since leaving the Monastery, the game's plot elements have been revealing themselves in a tantalizing manner -providing enough direction to push things forward while keeping the next step mysterious and just out of reach. Some might worry that the long road to a publisher might mar the quality of the graphics and sound, but while neither pushes any envelopes, they are both more than satisfactory thus far. Sirtech Canada has produced a product that makes me eager for more, and I look forward to exploring the extent of the world of Dominus.
