Today we have some interesting tidbits from the official KotOR forums for you:

Oh, it bustles.
There are places in KotOR where there is little action/life (like the deserts of Tatooine for example), but Taris is teeming.
Lots on humans, aliens, Sith to be seen. Some walking about, some standing and talking. Droids walk or roll or fly past. Some NPCs react to each other, others do not. Some react to you and engage in dialog, others say a quick "Don't bother me" and move on. There are ships flying about ala Coruscant and there are a couple of places where huge starships take off and land as you watch.
And it differs from planet to planet and location to location. Different environments for different situations. All of which are very cool.
I hope this clears that up a bit.

Maaaaaaaybe. Falls under story and plot stuff so I can't say much, but I'd say the chances are pretty good..

Answers, here they are:
Rancors can be found anywhere. You never know when a rancor will sneak up and eat you. Be on guard at all times!
On a scale of 1-10 of difficulty for mid-level PC/NPC combinations, with 1 being very easy (like beating up Bob McCabe) and 10 being impossible (like getting beaten up by me), the rancor rates a 86.
The unknown world does indeed have a name. Suprisingly is is Dave. When visiting Dave be on the look out for rancors with a difficulty rating of 86.

No not really.
As we've said before there really isn't much for "weather" in KotOR. There are winds (blowing dust, ruffling flags, etc), fog, sand storms and a few other things. But not moving clouds.
There are "special effects" like falling leaves on Kashyyyk or blowing grass on Dantooine though. And they look really great, but we were more concerned with "the down" than "the up".

No. The only person who will multi-class is the PC. All other party NPCs have their classes already assigned.

Very, very close. Speaking to some of the folks on the Dev team today they are very confident about the final testing that is going on. The testing procedure gets quite bizarre toward the end with things like 'stand on your head while pressing all button on your controll and then try to visualize a calm blue ocean with tapping the reset button and eating a jam and taco chip sandwich'. It's wierd man.
