Here's the sauce: Today's update to the official Morrowind web site features a new team diary that reveals the special "goodies" that come in the collector's edition for the PC version of Morrowind, plus a glimpse at the map that will ship with all versions of the game. Also included is a work of fiction from the game, and a list of the stealth skills. In short, what you will get with the (cool looking) collectors edition is a soundtrack CD, a figurine, a book about the art of Morrowind and a map. Nice goodies.
