GamerGod let us know they have an interview with LucasArts' Associate Producer Julio Torres about 'Star Wars Galaxies':
Jeff - Creature handlers are having issues with pets in the post CU world. For one, pets that were previously callable are now uncallable. This seems to come in two forms. The first being due to the balancing of creatures, many desirable pets on the adventure planets are now above CL 70 and thus uncallable and untamable. The second being that certtain bio engineered pets have been converted to ridiculously high level post CU, often at CL 150+. To make matters worse there is no option to downgrade the pet level or change the stats. Are there any plans to address this and other Creature Handler issues in the near future?

SWG Julio - The combat upgrade was designed to "even the playing field" for all the professions. The creature handler before the CU was a very unbalanced, overpowered profession. There was a real need to adjust it so it could coexist in harmony with the other professions. We understand that the profession changes may require small tweaks as the game evolves, so we will be watching this profession -- as well as all the others -- with this in mind.
