PCGameWorld brings us an interview with Haden Blackman from LucasArts. Here's a snip about NPC interaction:
What kinds of NPC character interaction can players expect? How will interactions with major characters like Darth Vader and Boba Fett differ from those with other NPCs?

Haden: Players will be able to interact with a wide range of NPCs, from characters we've invented to characters named in comics or novels to the major film figures. In many cases, players will be receiving missions or quests from these NPCs. The most "famous" NPCs, like Jabba or Princess Leia, sit at the "top" of a series of missions: you basically work your way through Jabba's Palace, completing quests for all his cronies, before you can receive missions directly from Jabba himself.

The missions handed out by these named NPCs are usually the most difficult - and the most rewarding. Depending upon your role in the game, you might end up fighting a handful of the "named" NPCs, like Vader or Boba Fett. It's also important to note that there are dozens of recognizable "NPC Groups" that you'll battle: Stormtroopers, Tusken Raiders, Rebel soldiers, Gungans, Ewoks, and a variety of others.
