Ive heard of these "strongholds" but i dont know what and the heck they are

It's a really general term. It just means 'fort' or 'big fortification-like building'. For example, a Dunmer stronghold is a big rounded rectangle with buildings protruding from the top (there's one to the east of Caldera). A Telvanni stronghold probably looks stupid.
