How the heck does alchemy work
do I need a mortor and pestile bottles or what?

Yes, you need a mortar and pestle as minimum requirements (other than ingredients of course) - if you're so inclined, there are some very easily stealable Masters' alchemical apparati (no-one around to see you!) in the Caldera Mages Guild tower. You can augment your set up with such things as calcinators, alembics, and, er, something else, which increase potency/decrease poisons and other bad effects in your potions (all also stealable from Caldera). Be warned, though - if you alchemy skill isn't high enough or your materials are crap, you'll get VERY FRUSTRATED trying to make potions.

i stole all my masters alchemy stuff from the alchemy store in balmora.
You need a cameleon ring or moonshadow birth sign.

With the moonshadow birth sign you can steel 1 item at a time. After you steel 1 item you can be seen again.

You need a cameleon ring or moonshadow birth sign.

I stole the alchemy stuff in Balmora too. The Alchemist there has a grandmaster's morter and pestle that you can steal.

But the mage's guild in caldera has a full set of Master's equipment with no one watching it. Playing as an alchemist-thief, I stole all that, then I stole the Grandmaster's mortar and pestle from Balmora, and sold off the Master's mortar and pestle for approx. 1200. Easy money early on.
Transport to Caldera: $10.
Transport to Balmora: $10
Making 15 point, 60 second Levitate potions at Level 1: Priceless

The Mage Guild in AldRuhn also has an unguarded chest in a room with all sorts of Alchemy equipment.

I stole a complete master set in balmora ( all 4 items).
It's easy if you have a cameleon ring.
You can steel it very early on in the game, without going someware.
