Anyone know what these settings do?

I know the meaning for 2 of those.

0 = off / 1 = on

zDetailTexturesEnabled=1
Means that if you walk near a wall for example it appears to have richer detail. This does not work at all BTW...

zLevelLODStrength=0
Means that if you set the value to 0 the engine does not reduce detail from any object no matter how far it is. LOD = Level Of Detail. Try different values and experiment 13000 is the default value.

Did you look in your Gothic.ini after enabling it? There is a new section with the same variable name in it set to 0. Maybe setting it to 1 and (the subdiv one) will work?

Well, I have found that detail texturing does not work in Gothic (my video card is GF2 GTS 32MB). Which is not a surprise, after all... it's Gothic! (Gothic is a original german language word and means "full of bugs")
