Won't that Paladin that stands at the top of the siege engine teach you?

No.Uthar(I think taht is his name) only teaches up to 30%.And this is somehow funny cause one of the paladins in the castle in VoM said that Uthar is the best crossbowman he ever saw.And if Uthar can only teach you how to shoot up to 30% that means the paladins are supposed to be lousy archers/crossbowmen

Maybe how much % you can learn has do do something wiht in which chapter you are ,but I dont think so.Try the Militia man at the city of Korinis. He sits right as you enter the militia quorters.

The only one I've run into that can teach past 60 is Girion and that was in ch6.

I haven't checked with all DH in VoM,cause I don't recall one of them teaching crossbow.
How do you take Girion with you? What do you have to do in order to take Girion with you?,cause I finished G2 3 times but only once I had Girion on my crew.

I also finished Gothic 2 3 times but I never missed Girion. When I had my crew together I was always going for a last time to the city or elsewhere to do some final jobs or to say goodbye to Edda and I always found Girion standing close to the ship on the path to the city. All the time he asked me what I want to do with the ship, and I never choiced an option which had the consequence that he didn’t come with me on the ship (I don‘t know if there is an option for that).

My crew was already at full strength when I met Girion at the harbor for the first time, and I don't remember getting an option to take him with me when we talked so I didn't take him with me then.
Second time around, my crew wasn't at full strength, and I got the option, so I enlisted him.

It is also for another purpose useful to have Girion on the ship: he brings Exp. ... (I don’t want to spoil now too much ....)

I always took Girion by not killing the ship guards and using clout or letter from judge. When you go onto the ship that way, he always appears at the end of the dock. Then I use the first option 'I need the ship' I think. He has always come on board.

Girion trains paladins on the greens in front of Lord Hagen's residence. He's doing this until he leaves for the ship in chapter 6.
