Learning at Trainers
   

Well, does learning at trainers actually also add points to the corresponding skill, like you have learned it by doing ?

And if you have made more than 10 skill gains on a level, do the others count for your next one ?

yes, I believe training does contribute to your level and stat increase. I've leveled up before by only training

Yes, as long as you train your main or secondary skills, it will count towards your leveling up. NOT if you train your misc skills though.
