When you do some temple quests you have to kill a person impersonating to be the nevernine, it says you have to convince him that hes not the nevernine or kill him because the real nevernine cant die. If thats true? How come we can die?

Because it's a game.
Have you noticed the game doesn't continue after you die? So you'll never hear anyone saying "Oh, player died, he can't be the neravarine".
In a way, the player can't die, he just reloads.
