Thieving is Hard!
   

I'm on merely my 2nd job for the Thieves Guild in Balmora. I'm supposed to steal a key from one of two people to get into one of the manors. The problem is, whenever I pickpocket someone and try to grab the key, they notice me and attack. I've reloaded and reloaded, but the same thing happens every time. I have 50 sneak skill, which ain't bad I guess. Am I missing a strategy here because it seems impossible to finish any thief jobs right now.

Best course in thieving:
-save before going in position to steal
-turn yourself invisible, preferrable via the amulet of shadows you can get off the 'dancer's companion
-sneak
-get in position behind people and try to steal things 'over their shoulder'

My sneak skill is laughable, but so far I could steal pretty much what I wanted as long as I stayed behind people to steal stuff in front of them.

Well, I can mostly steal stuff in the open. The problem is pickpocketing people. I can't steal stuff people actually have on their person, which is essential for the thief guild jobs it seems.

It's been some time since I did that one, but it's the guy in the
Verano manor or something, right.

Actually it is the easiest way, to have him attack you.
Just kill him. You'll have a nice house to...

Yeah I killed him once, but there's something called roleplaying I'm trying to do here. It's no fun for me to power game. Was just wondering if there's any techniques I can use to pickpocket better.

Additionally, you could just knock him down with hand to hand attack. This is what I did. When he's laying on the floor, you may rob him easily from everytihng

This way you won't kill him.

I tried a bunch of times to pickpocket him, but I think my stealth and security skills were just too low. Finally I bribed him a couple of times and he just gave it to me.
