Quests for other guilds
   

If I intend to be a paladin when I finally choose a guild,is there any reason why I cannot do Thieves' Guild,mercenary and mage quests first as long as I stop short of joining up?

You can and should do as many quests as possible before joining a guild.....but there is very little you can do magewise. You don't get any mage quests until you enter the monastery, and you have to join the guild to enter. Bringing the sheep to Pedro enters the guild, so be careful.

If in doubt, do a save before talking to someone, or answering a certain question.

You can still join do the Thieves' guild quest after joinin one of the guilds. It's not a major guild like the militia, mercenaries and novices.
