I am still roaming around Old Town. I am level 3 and thought I would buy a skill with my points. Of learning how to skin, take off fur, pull teeth, and de-claw; which is the most desirable? I talked to hunter and he described the skills, some cost more than others, and he described monsters that I haven't seen yet, so which if any of these skills are desirable, if any. Or, should I get some learnin' from the thief.

Oh, one more thing. Fingers said that I should learn a skill on my own. I have been going through everyones' chest and I haven't "taught" myself anything. How do you teach yourself lockpicking, if not by practice?

I think there are several possibilities.
At first - do you want to be warrior, ranger or mage? (you can be later in game f.e. perfect warrior and good ranger), so this is not absolute, but important in begining.
For example if you want to be mage, you will need some exp. points for it. You will have possibility to spend 70 points for it. You will be level 7 (if you do most "before joining" quests in all camps and kill several monsters). So when you are level 3 it is nearly time to save exp. points.
But you can choose other ways. For warrior is most important strenght (but also dexterity) and you should learn 1hand weapons and later 2hand weapons (you maybe should choose which one will be you specialization).
For ranger is most important dexterity and bow or/and crossbow skills (but not only dexterity).
Acrobatics is good but not necessary (you can jump on higher spots and shoot your enemy from safe distance).
Picklock is good for money and weapon (you can get in chests).
Etc.
Maybe you should read something about this in JemmyM walktrough (link is somewhere around in this forum), because there are many many possibilities how to "create" you charakters skills.
