Soul Trapping?
   

How do I aim/use a "Soul Trap" spell?

I have been unable to trap anyone's soul of yet, because as soon as I engage in combat with them, their name disappears and I do not know where to aim the spell. I have a half dozen soul gems.

Can you only trap animal souls? I think I have been able to catch an animal's soul. Thanks.

Even though you can't see the creatures name, just center the cursor on him and cast the spell. If it is a touch based spell and it is a flying creature it may miss, so make a target creature spell and you should be fine.

Take a soul gem in your hand.
Cast a soul trap spell on the creature.
Switch to weapon or attack spell.
Kill it in time.
Tadaaaa.
The soul is trapped in the soul gem and can be used for enchanting.

Or where are good places to look?

Actually the soul gem doesn't have to be in your hand as long as you have a soul gem of sufficent size in your inventory it should use one automatically, at least it does for me.

Oh btw, NPCs souls can't be put in soul gems, and Vampires are NPCs.

If its still not working its because you dont have a large enough soul gem for the critter you killed.
